Arugula Parmesan Salad

I love the combination of arugula, parmesan and cherry tomatoes in this salad recipe. The lemon forward dressing gives this salad a delicious and refreshing flavor. Enjoy!

  • Wash and dry the arugula and place in a medium bowl. Set aside.
    4 cups arugula
  • Wash the cherry tomatoes and slice in half or leave them whole. Add them to the arugula.
    1 ½ cup cherry tomatoes
  • Whisk together dressing ingredients in a large glass measuring cup. Drizzle a forth of the dressing onto the arugula leaves.
    2 tbsp fresh lemon juice, 2 tbsp extra virgin olive oil, ¼ tsp minced garlic, ¼ tsp salt, ⅛ tsp black pepper
  • Toss the salad with tongs and then add in the remaining dressing.
  • Toss until the arugula is evenly coated. Top with parmesan.
    ¼ cup Parmesan cheese
  • If using croutons, add them on top. Serve and enjoy!
