I love sweet potatoes and they are so good for you. However, they can be tedious to prepare. That's why I created this short cut to simplify the steps to having delicious mashed sweet potatoes as a side dish. Pair them with any entree. Enjoy and let's get cooking!
Wash the sweet potatoes and dry them with a clean towel or paper towel.
4 sweet potatoes
Use a fork and poke each sweet potato about 6-8 times ensuring you cover all sides of the sweet potato.
Brush each sweet potato with olive oil, coating the entire sweet potato.
2 tbsp olive oil
Using tongs, place the sweet potatoes into the preheated air fryer tray and cook for 40 minutes at 400℉. Test with a fork to ensure they are soft inside.
When done, take out the sweet potatoes and let them cool for at least 30 minutes. Once they are cool, cut open the sweet potato and separate the peel with a spoon. Scoop out the sweet potato into a bowl. Discard the peel. Do this for each sweet potato.
Add ¼ tsp of butter and season with salt and pepper to taste. Serve and enjoy!
