This Greek marinated chickpeas recipe takes the traditional chickpeas to a whole new level. The combination of ingredients gives them a delicious flavor. Drain and rinse your canned chickpeas. Once drained, place them in a medium mixing bowl.
1 14 oz can chickpeas
Add the extra virgin olive oil, salt, freshly squeezed lemon juice, fresh chopped parsley, cumin, garlic powder and black pepper. Mix well to combine.
½ tsp salt, 4 tbsp olive oil, 1 lemon, 2 tbsp parsley, ½ tsp cumin, ½ tsp garlic powder, ⅛ teaspoon black pepper
Place the chickpea mixture in an airtight container and refrigerate for 24 hours. Stir the chickpeas every few hours so they are evenly infused with the oil and spices.
Remove chickpeas from the refrigerator an hour before serving, so the olive oil comes to room temperature.
Serve room temperature and enjoy these over rice, salad, or as is.
