  • Preheat your oven to 350℉.
  • Prepare you muffin pan by coating it with non stick cooking spray.
  • In a medium bowl, mix Greek yogurt, maple syrup, eggs and vanilla extract.
    1 cup Greek yogurt, ¼ cup maple syrup, 2 eggs, ½ tsp vanilla extract
  • Add in flour and baking powder. Mix until well combined.
    1 cup flour, 1 tsp baking powder
  • Fold in the fresh blueberries.
    1 cup blueberries
  • Drop batter into your muffin cups and fill each cup ½ to ¾ full. Bake in preheated oven for 20 to 25 minutes.
  • Serve and enjoy!
