I just got back from a fabulous girl's trip to Palisade, Colorado. It's such a beautiful spot to visit and it has so many fun things to do. I was lucky enough to be there during their peach season so I had a little fun making specialty cocktails. One favorite cocktail that I created for my friends was appropriately given the name Palisade 75. It's a spin on the traditional French 75 but I used peach infused simple syrup. Give it a try and see if you love it as much as I do!

Prepare the lemon peel garnish by using a channel knife or vegetable peeler and peeling a long strip of peel from 1 medium lemon.
1 long peel from a lemon
Juice the lemon until you have ¾ ounce of juice.
¾ ounces lemon juice
Place the lemon juice, 1 ½ ounces gin, and ¾ ounce simple syrup in a cocktail shaker. Fill the shaker halfway with ice, seal, and shake for 20 seconds.
Pour through a strainer into a Champagne flute. Slowly pour in 2 ounces chilled dry sparkling wine.

Hold the lemon peel over the cocktail and twist the peel to express the oils onto the surface of the drink. Run the outside of the peel over the rim of the flute, then drop the peel into the cocktail.
Serve chilled and enjoy!
