Cut the spaghetti squash in half lengthwise and scoop out and discard the seeds. Drizzle with extra virgin olive oil and season with salt and pepper. Arrange cut side down on a baking sheet lined with parchment paper.
1 spaghetti squash, 3 tbsp extra virgin olive oil, salt and pepper
Roast the squash until flesh is soft and easily shreddable or about 45 minutes.
Remove from the oven and separate the flesh from the skin using a fork. Discard the skin of the squash.
