½ large, seedless watermelon, ⅓ feta cheese, ¼ cup mint, 1 tablespoon olive oil, 1 tablespoon honey, ¼ teaspoon kosher salt, 2 teaspoons lime juice, ¼ cup green onion
Toss gently to combine.
Taste and adjust any ingredient as-desired.
Chill in the refrigerator until ready to serve. Serve cold and enjoy!
