This corn bread muffin recipe is easy to make. The cream corn gives these muffins some extra flavor and moisture. They go well as a side for any meal. Give them a try. Enjoy!
Preheat oven per muffin mix box instructions. Prepare a muffin pan by placing paper cupcake cups in each muffin slot. Set aside.
In a medium bowl, add in the muffin mix, egg, milk, melted butter and half a can of cream corn. Mix all of the ingredients together.
1 box Krusteaz Honey Corn Bread Mix, ½ can cream style corn, ⅔ cup milk, 1 egg, ⅓ cup butter
Pour mixture into each paper lined muffin slot. Fill the muffins 2/3 full.
Bake per the box directions. Test if muffins are done by sticking a wooden skewer in one of the muffins. If it comes out clean, it is ready. If not, continue to bake at 1 minute increments until the skewer comes out clean.
Once done, remove the muffins from the oven and let cool.
While muffins are cooling, melt butter and honey together in a small bowl.
4 Tbsp butter, 4 Tbsp honey
Brush the honey and butter mixture over each muffin.
Serve and enjoy!
