Almond Vanilla Granola

Equipment
- 1 Food processor to chop nuts
Ingredients
- 6 cups rolled oats
- 4 ½ tsp cinnamon
- 1 tsp nutmeg
- 1 ½ cups almonds chopped or sliced
- ¾ cups maple syrup
- ¾ cup coconut oil or oil of choice
- 1 ½ tsp vanilla
- ¼ cup flax chia blend optional
Instructions
- Preheat oven to 350℉. Line a baking sheet with parchment paper and set aside.
- In a large bowl, add in dry ingredients. Mix and set aside.6 cups rolled oats, 4 ½ tsp cinnamon, 1 tsp nutmeg, 1 ½ cups almonds, ¼ cup flax chia blend
- In a medium bowl or glass measuring cup, whisk together wet ingredients. If you are using coconut oil, ensure you melt it in the microwave for 40 seconds and include the liquid oil in this step.¾ cups maple syrup, ¾ cup coconut oil, 1 ½ tsp vanilla
- Pour wet ingredients over the dry ingredients, mixing to ensure all of the oats are coated.
- Spread the mixture in a thin layer onto a baking sheet lined with parchment paper.
- Bake for 8 minutes. Stir and fluff with a spatula and bake for an additional 8 minutes, watching carefully to ensure it doesn't over cook. The mixture should be golden brown and dry to the touch.
- Remove from heat and let it cool. Place cooled granola in an air tight container for storing. Serve and enjoy!
