  • Cook the quinoa according to the package directions and set aside.
    ½ cup quinoa

For the dressing:

  • Combine the dressing ingredients in a Mason jar. Add salt and pepper to taste. Seal the jar and shake until ingredients are combined. Refrigerate until ready to serve.
    ½ lemon, ¼ tsp garlic, minced, ½ tbsp Dijon mustard, 2 tbsp apple cider vinegar, 1 tbsp freshly squeezed lemon juice, 1 tbsp freshly squeezed orange juice, 2 ½ tbsp extra virgin olive oil, 1 ½ tbsp honey

Salad preparation:

  • Thoroughly drain the mandarin oranges or peel and segment clementines, shell and coarsely chop the pistachios, remove the skin and pit of the avocado, and thinly slice or chop. Drizzle the fresh lemon over the avocado.
    3 fresh clementine oranges, ⅓ cup pistachios, 1 large ripe avocado, ½ lemon

Salad assembly:

  • In a large bowl, add in the spring salad mix and the cool and cooked quinoa. Gently toss to combine. Add in the oranges, pistachios, feta cheese, and avocado. Remove the dressing from the fridge, shake well, and pour desired amount over the salad. Add salt and pepper to taste and gently toss. Serve and enjoy!
