  • Turn the pressure cooker into sauté mode. If you don’t have a pressure cooker, you can use a pan with a lid. Add oil, chopped onions, garlic, spices, salt and pepper. Cook until onions become soft and golden, for about 3 minutes. Then stir in the tomato sauce, brown sugar and bring to a boil. Pour the mixture into the food processor and blend all into a paste. Set aside.
    1 large yellow onion, 3 garlic cloves, 1 cup tomato sauce, 1 tbsp olive oil, 2 tsp salt, 1 tsp black pepper, 1 tsp ground turmeric, 1 tbsp garam masala, ½ tsp ground cumin, ½ tsp ground coriander, ½ tsp cayenne pepper, optional, ½ tsp ground smoked paprika, 1 tsp brown sugar or pure maple syrup
  • Prepare the meat by browning on both sides. Then pour in the blended spice paste, beef stock and lemon zest. Cover the lid and cook for 30 minutes on high pressure (or medium high heat if using a pan).
    2 lbs. beef, 1 cup beef broth, 1 tsp lemon zest
  • Serve with steamed cauliflower rice or jasmine rice.
