Cottage Cheese Alfredo Sauce

Ingredients
- 1 teaspoons olive oil
- ¾ cup cottage cheese whole milk or lowfat
- ⅜ cup whole milk or milk of choice
- ½ cup parmesan cheese
- 3 garlic cloves
- ¼ tsp black pepper more to taste
- ½ tsp salt more to taste
- 1 tbsp flour or corn starch
- 2 tbsp water
- 4 ounces angel hair pasta or pasta of choice; precooked per package instructions
Instructions
- Cook your preferred pasta according to the packaging instructions. Drain and set aside.4 ounces angel hair pasta
- Add the cottage cheese, skim milk, and Parmesan to your food processor container and blend on high.¾ cup cottage cheese, ⅜ cup whole milk, ½ cup parmesan cheese
- Blend until the contents are creamy and smooth. Set aside.
- In a medium saucepan, heat olive oil on medium heat. Add in the garlic and cook for up to one minute esnuring not to burn the garlic.1 teaspoons olive oil, 3 garlic cloves
- Pour the blended cottage cheese mixture into the pan, and simmer. The sauce will thin out very quickly and may look watery. That's normal and simply reduce the heat to low.
- In a small bowl, whisk the flour with cold water. Add into the warm sauce and whisk the sauce and the flour mixture. Cook until the sauce thickens.1 tbsp flour, 2 tbsp water
- Stir in the cooked pasta of choice and coat with the sauce. Add in the salt and pepper. Cook the pasta with the sauce for a few extra minutes until warm and ready to serve.¼ tsp black pepper, ½ tsp salt
- Serve and enjoy!
