  • Cook your preferred pasta according to the packaging instructions. Drain and set aside.
    4 ounces angel hair pasta
  • Add the cottage cheese, skim milk, and Parmesan to your food processor container and blend on high.

  • Blend until the contents are creamy and smooth. Set aside.

  • In a medium saucepan, heat olive oil on medium heat. Add in the garlic and cook for up to one minute esnuring not to burn the garlic.

  • Pour the blended cottage cheese mixture into the pan, and simmer. The sauce will thin out very quickly and may look watery. That's normal and simply reduce the heat to low.

  • In a small bowl, whisk the flour with cold water. Add into the warm sauce and whisk the sauce and the flour mixture. Cook until the sauce thickens.

  • Stir in the cooked pasta of choice and coat with the sauce. Add in the salt and pepper. Cook the pasta with the sauce for a few extra minutes until warm and ready to serve.
