Cottage Cheese Queso Dip

This is a nutritious spin on the traditional queso dip. Using cottage cheese adds some extra protein and really good flavor. It's so easy to make so give it a try.

Ingredients
 
 

  • 1 cup cottage cheese whole or 2%
  • 1 cup cheddar and Monterey jack cheese blend shredded
  • ΒΌ cup milk or milk alternative
  • 2 teaspoons taco seasoning
  • Tomato, jalapeno, cilantro, green chilis, green onions, cilantro or preferred toppings
  • Tortilla chips or vegetables, for serving

Instructions
 

  • In a food processor, add cottage cheese, cheese blend, milk and taco seasoning. Process until smooth, pausing and scraping the walls with spatula. Add more milk, if necessary.

  • Once it's reached desired consistency, transfer the queso to a medium size microwave safe bowl. Microwave for 15-20 seconds. Stir and microwave an additional 15-20 seconds. Remove from the microwave and stir again.

  • Top with your favorite toppings like chopped tomato, jalapeno, green onion, green chilis and cilantro. Serve immediately and while warm and pair with tortilla chips or fresh vegetables. Enjoy!
