  • Take the roast out of the packaging. Wash the roast with water and pat it dry with paper towels. Season the beef on both sides with salt, pepper, and thyme and set aside.
    1 2-3 lb beef roast, 2 tsp salt, 1 tsp pepper, 1/2 tsp thyme
  • Cut the onions into thick slices and place the onions into the crock pot or slow cooker. Put the seasoned beef on top of the onions.

  • Pour the broth over the beef and add in garlic.
    2 cups beef broth, 1 tsp garlic

  • Put the lid on the crock pot and set to 6 hours on high setting or 8 hours on low setting.
  • If you want to have sides of finger potatoes and baby carrots, add these into the crock pot 1 hour before the final cooking time.
  • Remove the roast when the time is up and let is rest for 15 minutes before serving.
  • Serve by spooning the broth over the sliced meat and add your sides of carrots and potatoes. Enjoy!
