This salad is so refreshing and it’s perfect to keep around. It stays nice and crunchy for the whole week. If you want some extra protein, just add rotisserie chicken on top. Give it a try!
Crunchy Detox Salad
This refreshing salad is always nice to have on hand. It stays crunchy all week. You can add rotisserie chicken on top for some extra protein and have leftovers for lunches or sides throughout the week. Enjoy!

Ingredients
For the salad
- 1 coleslaw mix bag from grocery store
- 2 C cauliflower chopped into small pieces
- 2 C broccoli chopped into small pieces
- 1 ½ C parsley chopped into small pieces
- ½ C almonds sliced
- ½ C sunflower seeds
- 1 turkey deli meat (about 8 oz.)
For the dressing
- 3 tbsp olive oil
- ½ C lemon juice
- 1 tbsp ginger
- 2 tbsp honey or monk fruit
- ½ tsp salt
Instructions
- Prepare the salad ingredients as indicated in the notes next to each ingredient. Place the salad ingredients into a large bowl.1 coleslaw mix, 2 C cauliflower, 2 C broccoli, 1 ½ C parsley, ½ C almonds, ½ C sunflower seeds
- For the dressing, whisk the dressing ingredients into a bowl. Pour over the salad ingredients and toss until the salad is well coated.3 tbsp olive oil, ½ C lemon juice, 1 tbsp ginger, 2 tbsp honey, ½ tsp salt
- Top the salad with sliced turkey. Serve and enjoy!1 turkey deli meat (about 8 oz.)
