Easy Almond Butter Cookies
These cookies are a classic recipe for peanut butter cookies, but with a twist of using almond butter instead. This recipe is super simple and only needs 5 ingredients. They are perfect for those who follow a gluten-free diet or are looking for a protein-packed cookie to grab and enjoy on the move. Let's start baking!

- ½ cup granulated sugar
- ½ cup brown sugar
- 1 cup creamy almond butter
- 1 egg
- 1 tsp vanilla
Instructions
- Preheat the oven to 350℉. Line your baking sheet with parchment paper and set aside.
- Put all of the cookie ingredients into a bowl.½ cup granulated sugar, ½ cup brown sugar, 1 cup creamy almond butter, 1 egg, 1 tsp vanilla
- Blend all cookie ingredients with an electric mixer until the ingredients are thoroughly mixed.
- Using a spoon, scoop out dough to form 1 to 1 ½ inch balls. Roll the scoop of dough in your hands to form a ball and place on the prepared baking sheet. You will be forming about 16 balls.
- Ensure the balls are about 2 inches apart on the baking sheet. Then take a fork and press down on each ball, making a crisscross pattern with the back of your fork.
- Bake for 10 minutes or until lightly brown on the bottom.
- Remove from the oven and let them cool on a cookie cooling rack for 5 minutes.
- Serve and enjoy!
