  • Preheat the oven to 350℉. Line your baking sheet with parchment paper and set aside.

  • Put all of the cookie ingredients into a bowl.
    ½ cup granulated sugar, ½ cup brown sugar, 1 cup creamy almond butter, 1 egg, 1 tsp vanilla

  • Blend all cookie ingredients with an electric mixer until the ingredients are thoroughly mixed.

  • Using a spoon, scoop out dough to form 1 to 1 ½ inch balls. Roll the scoop of dough in your hands to form a ball and place on the prepared baking sheet. You will be forming about 16 balls.
  • Ensure the balls are about 2 inches apart on the baking sheet. Then take a fork and press down on each ball, making a crisscross pattern with the back of your fork.

  • Bake for 10 minutes or until lightly brown on the bottom.
  • Remove from the oven and let them cool on a cookie cooling rack for 5 minutes.
  • Serve and enjoy!
