Kori’s Meatloaf
I happen to be a huge fan of meatloaf. When I was a kid, I would beg my mom to make it for me. I have modified the recipe over the years and I have included some key ingredients that make this meatloaf recipe extra special. Give it a try and I hope it becomes a family favorite. Let’s get cooking!

Equipment
- 1 loaf pan
Ingredients
- ½ medium onion chopped
- 2 roasted red peppers jarred; chopped
- 1 teaspoon butter
- 2 eggs
- ¾ cup whole milk
- ¾ cup Italian breadcrumbs or panko bread crumbs
- 1 pound lean ground beef
- 1 pound lean ground turkey
- 1 tablespoon BBQ sauce or ketchup
- 1 teaspoon Italian seasoning
- 2 tablespoons fresh parsley chopped or 2 teaspoons dried parsley
- 1 teaspoon salt
- ½ teaspoon pepper
For the meatloaf sauce:
- 1/2 cup caramelized onion jam
- 1/4 cup BBQ sauce or ketchup or chili sauce
Instructions
- Preheat the oven to 350°F. Prepare your loaf pan by spraying with non stick cooking spray.
- In a frying pan, cook onions in butter over medium low heat until tender. Add in red peppers. Cook for another 3 minutes. Let them cool completely.½ medium onion, 1 teaspoon butter, 2 roasted red peppers
- In a medium bowl, combine eggs, milk, and breadcrumbs. Let the mixture sit for 5-10 minutes.2 eggs, ¾ cup whole milk, ¾ cup Italian breadcrumbs
- Add the ground beef, ground turkey, cooked onions, cooked peppers, BBQ sauce, Italian seasoning, parsley, and salt & pepper to the bowl. Mix until all ingredients are combined.1 pound lean ground beef, 1 pound lean ground turkey, 1 tablespoon BBQ sauce, 1 teaspoon Italian seasoning, 2 tablespoons fresh parsley, 1 teaspoon salt, ½ teaspoon pepper
- Form a 8″x4″ loaf on the prepared baking pan and bake for 40 minutes.
- While the meatloaf is cooking, make the sauce by combining the jam and the BBQ sauce. Set aside.1/2 cup caramelized onion jam, 1/4 cup BBQ sauce
- After the meatloaf has cooked for 40 minutes, spread the sauce over the meatloaf and bake for an additional 10-15 minutes or until cooked through and the meatloaf reaches an internal temperature of 160°F.
- Let the meatloaf rest for 10 minutes. Then serve and enjoy.
