Lemon Parmesan Kale Salad

Ingredients
- 4 cups curly kale
- 2 tbsp fresh lemon juice
- 2 tbsp extra virgin olive oil
- ¼ tsp minced garlic
- ¼ tsp salt
- ⅛ tsp black pepper to taste
- ½ cup seasoned croutons homemade or store bought
- ¼ cup Parmesan cheese freshly grated
Instructions
- If starting with a bunch of curly kale, wash, dry, and remove leaves from stem. Finely chop the kale leaves and add to a medium bowl. Set aside.4 cups curly kale
- Whisk together dressing ingredients in a large glass measuring cup. Drizzle a forth of the dressing onto the kale leaves.2 tbsp fresh lemon juice, 2 tbsp extra virgin olive oil, ¼ tsp minced garlic, ¼ tsp salt, ⅛ tsp black pepper
- Massage the dressing into the kale leaves using your hands. Do this until the leaves darken in color and become tender and silky.
- Pour the remaining dressing onto the kale and toss. Top the salad with freshly grated parmesan cheese.¼ cup Parmesan cheese
- Place the croutons on a cutting board and crush using a rolling pin or meat tenderizer. Sprinkle the crushed croutons on top of the salad. Enjoy.½ cup seasoned croutons
