For the dressing:

  • Add all of the dressing ingredients to a blender and pulse until well emulsified and ginger and garlic are finely minced. Pour into an airtight container and refrigerate while preparing salad.
    ¼ cup olive oil, ¼ cup avocado oil, 1 tsp lemon zest, 3 ½ Tbsp fresh lemon juice, 2 Tbsp honey or coconut sugar, 2 Tbsp fresh ginger, peeled and grated, 1 clove garlic, 1 tsp dijon mustard, ¼ – ½ tsp salt

For the salad:

  • In a large bowl, add all salad ingredients and toss. Shake the salad dressing and then drizzle over the salad. Gently toss the salad with tongs. Dish out the salad and sprinkle with sesame seeds (optional). Serve and enjoy!
