Mint Pesto

This is a unique twist on the traditional pesto recipe because it uses mint. This sauce pairs well with my lamb chop recipe. However, you can get creative and try it on chicken, vegetables or whatever you desire. It’s full of flavor and is a delicious addition to any meal. This sauce pairs well with a crisp white wine like Sauvignon Blanc or Pinot Grigio. So grab a bottle of your favorite wine and let’s get cooking!

  • Toast sunflower seeds in a dry skillet for 5 minutes or until lightly brown. Let cool.
    ⅓ cup sunflower seeds
  • Place the seeds into the food processor and finely crush.
  • Add the garlic, rosemary and salt into the food processor and blend to make a fine paste.
    1 clove garlic, ¼ tsp salt, 1 tsp rosemary
  • Add in the washed mint leaves and blend until all ingredients are mixed together.
    3 cups mint
  • Slowly add in the cheese and oil, a little at a time while mixing.
    ½ cup pecorino, ½ cup extra virgin olive oil
  • Serve on lamb or whatever you desire. Enjoy!
