Arugula Parmesan Salad

Arugula Parmesan Salad
I love the combination of arugula, parmesan and cherry tomatoes in this salad recipe. The lemon forward dressing gives this salad a delicious and refreshing flavor. Enjoy!

Ingredients
- 4 cups arugula
- 1 ½ cup cherry tomatoes sliced or whole
- 2 tbsp fresh lemon juice
- 2 tbsp extra virgin olive oil
- ¼ tsp minced garlic
- ¼ tsp salt
- ⅛ tsp black pepper to taste
- ¼ cup Parmesan cheese freshly shaved
- ½ cup seasoned croutons optional; homemade or store bought
Instructions
- Wash and dry the arugula and place in a medium bowl. Set aside.4 cups arugula
- Wash the cherry tomatoes and slice in half or leave them whole. Add them to the arugula.1 ½ cup cherry tomatoes
- Whisk together dressing ingredients in a large glass measuring cup. Drizzle a forth of the dressing onto the arugula leaves.2 tbsp fresh lemon juice, 2 tbsp extra virgin olive oil, ¼ tsp minced garlic, ¼ tsp salt, ⅛ tsp black pepper
- Toss the salad with tongs and then add in the remaining dressing.
- Toss until the arugula is evenly coated. Top with parmesan.¼ cup Parmesan cheese
- If using croutons, add them on top. Serve and enjoy!½ cup seasoned croutons
