- 1 cup cottage cheese
- 1 cup blueberries washed
- 1 cup flour
- ¼ cup maple syrup or honey
- 2 eggs
- 1 tsp baking powder
- ½ tsp vanilla extract
Instructions
- Preheat your oven to 350℉.
- Line a muffin pan with paper liners. If you don't have paper liners you can grease the cups using coconut oil or cooking spray.
- In a medium bowl, mix cottage cheese, maple syrup, eggs and vanilla extract.1 cup cottage cheese, ¼ cup maple syrup, 2 eggs, ½ tsp vanilla extract
- Add in flour and baking powder. Mix until well combined.1 cup flour, 1 tsp baking powder
- Fold in the fresh blueberries.1 cup blueberries
- Drop batter into your muffin cups and fill each cup ½ to ¾ full. Bake in preheated oven for 20 to 25 minutes.
- Serve and enjoy!
