  • Preheat your oven to 350℉.
  • Line a muffin pan with paper liners. If you don't have paper liners you can grease the cups using coconut oil or cooking spray.
  • In a medium bowl, mix cottage cheese, maple syrup, eggs and vanilla extract.
    1 cup cottage cheese, ¼ cup maple syrup, 2 eggs, ½ tsp vanilla extract

  • Add in flour and baking powder. Mix until well combined.
