Crustless High Protein Quiche

Crustless High Protein Quiche
This is such an easy quiche to make. When you add in the cottage cheese, you increase the protein content while adding a ton of flavor. Add in your favorite ingredients and you have a perfect crustless quiche. Give it a try and let's get cooking!

- 6 large eggs
- 1 cup cottage cheese
- 1 cup grated cheese optional
- ¼ tsp salt
- ⅛ tsp ground black pepper
- ½ cup optional ingredients choose 2: ham, spinach, zucchini, mushrooms, etc.
- 2 tsp olive oil to coat the frying pan and pie dish
Instructions
- Preheat your oven to 350 degrees F.
- Coat a frying pan with 1 tsp of olive oil. Cook your optional ingredients for 5 minutes on medium heat. If cooking meat, ensure the meat is fully cooked per cooking instructions.2 tsp olive oil
- In a large bowl whisk together the eggs, salt and pepper.6 large eggs, ¼ tsp salt, ⅛ tsp ground black pepper
- Stir in the the cottage cheese, cheese, and additional ingredients you are using (up to 1 cup in extra ingredients).1 cup cottage cheese, 1 cup grated cheese, ½ cup optional ingredients
- Pour the quiche mixture into a 9-inch pie pan that is coated with olive oil and bake on the middle rack uncovered for about 40-45 minutes. Check on the quiche and it is done when the center is set and it is golden brown in color.
- Serve immediately and enjoy!
