Easy Mashed Sweet Potatoes

I’m a big fan of sweet potatoes, but sometimes they can be a bit time-consuming to prepare. That’s why I came up with this quick and easy shortcut for making sweet potatoes as a side dish. I love to mash them and add a little butter and salt. They are so good and healthy. For inspiration, try them with my Sundried Tomato Salmon recipe. Easy Mashed Sweet Potatoes

I love sweet potatoes and they are so good for you. However, they can be tedious to prepare. That's why I created this short cut to simplify the steps to having delicious mashed sweet potatoes as a side dish. Pair them with any entree. Enjoy and let's get cooking!

  • Preheat the air fryer to 400℉.

  • Wash the sweet potatoes and dry them with a clean towel or paper towel.
    4 sweet potatoes
  • Use a fork and poke each sweet potato about 6-8 times ensuring you cover all sides of the sweet potato.
  • Brush each sweet potato with olive oil, coating the entire sweet potato.
    2 tbsp olive oil
  • Using tongs, place the sweet potatoes into the preheated air fryer tray and cook for 40 minutes at 400℉. Test with a fork to ensure they are soft inside.
  • When done, take out the sweet potatoes and let them cool for at least 30 minutes. Once they are cool, cut open the sweet potato and separate the peel with a spoon. Scoop out the sweet potato into a bowl. Discard the peel. Do this for each sweet potato.
  • Add ¼ tsp of butter and season with salt and pepper to taste. Serve and enjoy!
