Lemon Poppy Seed Loaf

- 1 ½ cups all-purpose flour or 1:1 flour for a gluten free option
- ½ cup oats ground; optional
- ½ tsp salt
- 2 tbsp poppy seeds
- ½ tsp baking powder
- ¼ tsp baking soda
- 6 tbsp butter at room temperature
- ¾ cup granulated sugar
- 2 eggs
- ⅔ cup vanilla Greek yogurt or plain Greek yogurt or sour cream
- 1 tsp vanilla extract
- 2 tbsp lemon zest
- 3 tbsp lemon juice
Instructions
- Preheat the oven to 350℉.
- Prepare the loaf pan by spraying the bottom with non stick cooking spray or rubbing it with butter. Set the prepared pan aside.
- In a medium bowl, stir together flour, baking powder, baking soda, salt and poppy seeds. Set aside.1 ½ cups all-purpose flour, ½ cup oats, ½ tsp salt, 2 tbsp poppy seeds, ½ tsp baking powder, ¼ tsp baking soda
- In your mixer bowl, add in the butter and mix on high speed until creamy, Then add in the sugar & continue to mix the ingredients.6 tbsp butter, ¾ cup granulated sugar
- Add the eggs, vanilla extract, lemon zest & Greek yogurt. Mix just until the ingredients are combined.2 eggs, ⅔ cup vanilla Greek yogurt, 1 tsp vanilla extract, 2 tbsp lemon zest
- Fold in the lemon juice and then add the flour mixture & mix until all of the ingredients are combined.3 tbsp lemon juice
- Spoon batter into prepared pan.
- Place the pan on the center rack of your oven and bake for 60-70 minutes at 350℉. Check the loaf at 60 minutes with a toothpick to see if it comes out clean. If not, continue to bake at 3-5 minute increments until a toothpick comes out clean.
- Once done, remove the pan from the oven. Remove the loaf from the pan and place it on a wire rack to cool completely before slicing. Enjoy!
