  • Preheat the oven to 350℉.
  • Prepare the loaf pan by spraying the bottom with non stick cooking spray or rubbing it with butter. Set the prepared pan aside.
  • In a medium bowl, stir together flour, baking powder, baking soda, salt and poppy seeds. Set aside.
    1 ½ cups all-purpose flour, ½ cup oats, ½ tsp salt, 2 tbsp poppy seeds, ½ tsp baking powder, ¼ tsp baking soda

  • In your mixer bowl, add in the butter and mix on high speed until creamy, Then add in the sugar & continue to mix the ingredients.

  • Add the eggs, vanilla extract, lemon zest & Greek yogurt. Mix just until the ingredients are combined.

  • Fold in the lemon juice and then add the flour mixture & mix until all of the ingredients are combined.

  • Spoon batter into prepared pan.

  • Place the pan on the center rack of your oven and bake for 60-70 minutes at 350℉. Check the loaf at 60 minutes with a toothpick to see if it comes out clean. If not, continue to bake at 3-5 minute increments until a toothpick comes out clean.
  • Once done, remove the pan from the oven. Remove the loaf from the pan and place it on a wire rack to cool completely before slicing. Enjoy!
