  • To make the salad, place the washed greens in the bottom of the salad bowl.
    4-6 cups mixed salad greens
  • Add in the chopped apples and remaining salad ingredients. Set aside.
    1 honey crisp apple, 1 fuji apple, ¼ cup pepitas, ½ cup feta, ¼ red onion, ½ cup carrots, 1 pint cherry tomatoes
  • For the dressing, add all of the dressing ingredients into a bowl and whisk. Season with salt and pepper to taste.
    ½ cup olive oil, ¼ cup apple cider vinegar, 4 tablespoons balsamic vinegar, 1 teaspoon Dijon mustard, 1 teaspoon salt, 1/2 teaspoon black pepper
  • Pour half of the dressing over the prepared salad and toss. Reserve the remaining salad dressing so that people can add more to their liking.
  • Serve and enjoy!
