Palisade 75
One of my favorite destinations to visit in Colorado is Palisade. The mesas that frame this quaint town offer breathtaking views and make for an incredible backdrop while enjoying a glass of wine at a local vineyard. The seasonal fruits are delicious, and the peaches are particularly amazing. They are so juicy and literally melt in your mouth! I couldn’t resist trying something new with my classic French 75 cocktail recipe by infusing the simple syrup with a fresh Palisade peach. It turned out amazing and I highly recommend you try this special drink and see if it captures your heart like it did mine!
Palisade 75
I just got back from a fabulous girl's trip to Palisade, Colorado. It's such a beautiful spot to visit and it has so many fun things to do. I was lucky enough to be there during their peach season so I had a little fun making specialty cocktails. One favorite cocktail that I created for my friends was appropriately given the name Palisade 75. It's a spin on the traditional French 75 but I used peach infused simple syrup. Give it a try and see if you love it as much as I do!
Equipment
- 1 champagne glass vintage option
Ingredients
- ¾ ounces lemon juice freshly squeezed
- 1 long peel from a lemon for garnish
- 1 ½ ounces gin
- ¾ ounces peach infused simple syrup see recipe
- 2 ounces Champagne chilled, or substitute for a dry sparkling wine
- ice
Instructions
- Prepare the lemon peel garnish by using a channel knife or vegetable peeler and peeling a long strip of peel from 1 medium lemon.1 long peel from a lemon
- Juice the lemon until you have ¾ ounce of juice.¾ ounces lemon juice
- Place the lemon juice, 1 ½ ounces gin, and ¾ ounce simple syrup in a cocktail shaker. Fill the shaker halfway with ice, seal, and shake for 20 seconds.1 ½ ounces gin, ¾ ounces peach infused simple syrup, ice
- Pour through a strainer into a Champagne flute. Slowly pour in 2 ounces chilled dry sparkling wine.2 ounces Champagne
- Hold the lemon peel over the cocktail and twist the peel to express the oils onto the surface of the drink. Run the outside of the peel over the rim of the flute, then drop the peel into the cocktail.
- Serve chilled and enjoy!
