Steamed Artichokes
Artichokes are one of my favorite green vegetables. They are so easy to make when you steam them. They offer so many benefits that it’s worth giving artichokes a try or put them back on your dinner plate. You can simply squeeze a little lemon on top and drizzle with olive oil. Alternatively, consider dipping the leaves in a side of melted garlic butter or mayonnaise. With a variety of options available, exploring different ways to savor artichokes is a must. Steamed Artichokes

- Place a steamer basket in a large pot and fill with water until just under the basket level.
- Use a serrated knife to cut the bottom stem and ½ inch off of the top of each artichoke. Add artichokes to the steamer basket and set to boil over medium high heat.2 artichokes
- Cover the pot.
- Steam for 25-45 minutes depending on the size and number of artichokes. Artichokes are ready when leaves pull off the stem easily.
- When done, remove from the heat. Let the artichokes stand for 5 or more minutes or until the leaves have cooled enought to eat. Serve with hot garlic butter, mayonnaise or preferred condiment. Enjoy!
