Watermelon Feta Mint Salad

Ingredients
- ½ large, seedless watermelon cubed (or 1 mini seedless watermelon)
- ⅓ feta cheese crumbled or cubed
- ¼ cup mint fresh, roughly chopped
- 1 tablespoon olive oil
- 1 tablespoon honey
- ¼ teaspoon kosher salt
- 2 teaspoons lime juice freshley squeezed
- ¼ cup green onion sliced
Instructions
- Combine prepared ingredients into a large bowl.½ large, seedless watermelon, ⅓ feta cheese, ¼ cup mint, 1 tablespoon olive oil, 1 tablespoon honey, ¼ teaspoon kosher salt, 2 teaspoons lime juice, ¼ cup green onion
- Toss gently to combine.
- Taste and adjust any ingredient as-desired.
- Chill in the refrigerator until ready to serve. Serve cold and enjoy!
