My mom definitely had a sweet tooth. And I inherited my love of desserts from her. She took the traditional Puerto Rican flan recipe but added a twist. The cream cheese adds a sweet richness to the dessert and the caramel sauce satisfies any sweet tooth. Give it a try and see if you love it as much as I do.

Mom’s Flan

This flan recipe has a slight twist to the traditional Puerto Rican flan. My mom would make it for us on Christmas morning and it's a sweet treat. Enjoy all of the flavors in this delicious flan. Let's get baking!

For the flan:

For garnish:

  • berries, mint, whip cream optional, for garnish
  • 1 caramel sauce store brand or homemade (see notes)

Instructions
 

  • Preheat the oven to 350℉. Ensure the rack is placed in the middle position.
  • Place all of the flan ingredients into a mixing bowl. Use your standing mixer or a hand held mixer to combine all of the flan ingredients. Blend until the ingredients are well combined and the mixture is creamy.
    6 eggs, 1 14 oz. can condensed milk, 1 12 oz. can evaporated milk, 1 ½ tsp vanilla extract, 1 8 oz cream cheese

  • Pour this mixture into a high walled casserole dish or 8×8 baking dish that holds about 6 cups. Then give the dish a few small taps on the table to ensure the mixture is balanced and any air bubbles are removed.

  • Carefully put the tray on the middle rack of your preheated oven and bake for 45 minutes. The flan will rise and fall like a souffle while baking. You will need to keep an eye on the flan to ensure it doesn't over cook. The flan will get golden in color and you will want to check to see if it’s done by inserting a knife into the center of the flan. If it comes out clean, your flan is ready. If the knife isn't clean, continue to cook for 5 minute increments until ready.
  • Remove the done flan from your oven and pour your caramel sauce over the top. Let the flan cool at room temperature for about 45 minutes. Once it's cool, place it in your refrigerator for at least 3 hours, or ideally overnight before serving.

  • When you are ready to serve, cut a piece and garnish with ingredients like berries, mint, whip cream. Enjoy!
